  早期綠島先民在艱苦的生活中,食物大多取於大海,島上的耕作主要以甘藷及花生為主,就變成日常的主食。而海味則多以製成乾貨儲存,所以綠島傳統食物自然與甘藷花生脫不了關係。目前還能完整的製作全套傳統美食的餐廳已經不多了,若欲嘗遍每一道佳餚,就到綠島來尋寶囉。



芡粿(Starch Cake)

製作是將糯米研磨成漿,再加入花生及九層塔,以熱油煎成薄餅,花生的香氣與九層塔的美味相結合,令綠島人即使到了外地還會懷念這道家鄉美食。芡粿在過去是入厝、廟會才吃得到的珍品,今日則是吃巧又吃飽的美食。
Green Island's traditional fired cakes are made of rice milk , peanuts , basil and spring onions . In matching the aroma of peanuts with flavour of basil , the starch cakes smell and taste brillant and have won food lovers' praise.


海菜湯(Seaweed Soup)
冬季綠島的婦人,頂著強烈的東北季風採集生長在礁岩或海砂中的海藻,經過繁複清洗手續,把海砂等雜質處裡乾淨,完畢後與柴魚片、蛋花、青菜、吻仔魚一起煮湯,即成為一道營養價值高的綠島傳統菜餚。
The seaweeds collected around Green Island are very special. In making seaweed soup , after seaweeds are cleaned , dried bonito flakes , tiny dried fish , egg drops and green vegetables can be added . The becomes a local traditional nutritious dish .


飛魚料理(Dried Flying Fish)
每年5-6月間,是飛魚隨著黑潮洄流到綠島附近的季節。新鮮的飛魚可清煮或做成生魚片,不過最具綠島風味的還是飛魚乾,快炒後的飛魚乾有一種特別的風味,令人垂狿。
Between May and June every year is the season of flying fish can be boiled or be cut into sasimi(raw fish slices). The most special flavour is friend flying fish , with fast flying . For which people hace a good appetite.


章魚滷肉(Fried Octopus)
綠島的章魚鮮嫩甜美肉質肥厚,加入蒜苗快炒,將蒜苗的香味融入鮮嫩的章魚中,是一道相當可口的風味餐。綠島人把章魚曬成乾稱為『石支』後,加入滷肉一起烹煮,風味更是一絕。
Octopuses collected here are tender , fresh and luscious. In making fried octopus dish , garlic shoots should be fried fast and then the aroma can penetrate into the fresh and tender meat of octop uses. This will be a very selicious dish.


花生豆腐(Peanut Tofu)
花生豆腐是一道健康食品,完全純手工製作,不含任何人工添加物,嚐起來口感清爽且有花生的香味,隱約中又帶點鹹味,是相當受歡迎的傳統風味餐。
Healthy food , peanut tofu(bean curd), is purely home-made without any artifical additives. It tastes refreshing and has slightly salty and smells with an aroma of peanuts. So this traditional dish made of peanut tofu is very popular.
 

炸地瓜絲


豆頭
用花生與糯米榨成漿,再加入豆仔或其他青菜,一起熬煮成為更湯狀,是一道甜鹹皆宜的佳餚,也是一道是合下飯的風味餐。
